Default Aging temps

How important is temp when aging a sour beer? My cellar ranges from about 60f this time of year to maybe 75f during the summer. Changes are very gradual.

Not that important. Lower temperatures 'promote' slower activity while higher temperatures promote faster activity/aging. Most sour producers will age through a round of seasons, as they age in oak, to allow for the beers to extract more flavors. (Wood absorbs liquid in the summer and lets it go in the winter.)
