Default Mild Mannered Porter


So before getting into this recipe I have to pay homage to Orfy and his Mild Mannered Ale

All-Grain - Mild Mannered Ale (AG) (E) UK/US - Home Brew Forums

The following recipe was my first attempt at Orfy's Mild ale, but as you can see it turned into a Brown Porter. I brewed his Mild later on and it was quite delicious. Thankfully even though I messed several things up on this initial recipe, it still turned into a good brew and is now in my regular rotation. So here it as follows:


Mild Mannered Porter
12-A Brown Porter

Efficiency: 94.0%

Original Gravity: 1.048 (1.040 - 1.052)
Terminal Gravity: 1.013 (1.008 - 1.014)
Color: 21.71 (20.0 - 30.0)
Alcohol: 4.53% (4.0% - 5.4%)
Bitterness: 21.8 (18.0 - 35.0)

Ingredients:
5.5 lb Maris Otter
1.5 lb Caramel Malt 60L
1.0 oz Fuggle (4.0%) - added first wort, boiled 60.0 m
1.0 oz Fuggle (4.0%) - added during boil, boiled 15.0 m
1.0 ea Fermentis S-04 Safale S-04
.5 lb American Chocolate Malt

Schedule:
Ambient Air: 70.0 °F
Source Water: 60.0 °F
Elevation: 0.0 m

00:05:00 Mash In - Liquor: 2.34 gal; Strike: 167.92 °F; Target: 156.0 °F
01:05:00 Mashing - Rest: 60 m; Final: 153.7 °F
01:13:00 Mash Out - Water: 1.0 gal (imp); Temperature: 175.4 °F; Target: 160.0 °F
Batch Sparging - Batch Sparge #1: 2.0 gal sparge @ 207.0 °F, 15 m;
Batch Sparge #2: 2.0 gal sparge @ 180.0 °F, 15 m; Total Runoff: 6.32 gal

Results generated by BeerTools Pro 1.5.18

So as you can see I had a Mash of 156 and then added a gallon of boiling water at the end to loosen up the mash, which brought it to about 160F. Then I did a double batch sparge to get to my volume.
I did a 90 minute boil and added my additions of Fuggle at 60 mins. and 15 mins. Also added 1-Whirfloc tab and 1/2 Teaspoon of Wyeast nutrient.
Cooled to 65F and pitched S-04 on top of the wort.
I usually leave this in primary for 7 days and then to secondary for 14 days
I have just left it in the primary for 14 days and then kegged it. This brew is ready by the month mark. S-04 is some fast fermenting stuff.
Also just as a note you can see my effeciency is around 94%. For those who get around 75% you will want to add a pound or two extra of Marris Otter. I regularly get 90%-95% effeciency with small grain bills using the double batch sparge system.

On tasting:

Aroma: Malty, Chocolate comes through alot, slight caramelly, slight hop aroma,

Appearance: Light Brown, clear (if you throw into a secondary), light tan head w/ decent retention

Flavor: Malt driven with Mild roastiness and chocolate comes through in first gulp, slight sweetness from the caramel malt, medium hop bitterness.

Mouth feel: Medium-light body and I put some moderately high carbonation on this (2.4). Just my preference though

I will throw some pictures up here sometime. I have never submitted this to be judged, just not my thing. Give it a whirl, it is a cheap grain bill and you wont be disappointed.
