Young's Double Chocolate Stout.
|
|
So I was shopping through the LCBO on Saturday night for some beer to drink at my buddies Engagement party. As of late the LCBO has been really pushing craft beers, so much in fact I'd say the section is larger than the commerical beer section. Needless to say I don't shop at the Beer Store anymore!...
Anyway, So I'm perusing the aisles for something new and interesting when I stumble upon the beer I've been looking for about a year!... Young's Double Chocolate Stout....and there were only 3 bottles left! I grabbed all 3.
Now, I'll be honest, I'm not much of a stout drinker. Maybe once and a while, so I wasn't really sure what to expect when I cracked it open. When I did and smelt that aroma I knew it was going to be good...and I was right, that beer blew me away. That however was not the best part of this experience.
At the party I had several of my bud light drinking friends ask me, "What the F is that??". I told them to try it. They did and they were blown away!...So cue my speech about homebrew etc etc... The conversion process has begun....muahahahahahahahahahaha!
Now with all that being said. Don't suppose any of you have a recipe for it?
I'd assume it would have some chocolate malt and maybe some cocoa powder at 15min in the boil? As far as hops go and other processes I'm in the dark.

Young's DC Stout is a very tough beer to clone in my opinion. It's hard to get the chocolate flavor without sacrificing head retention. Also, it depends on what types of chocolate you use. I'll check around and see what I can come up with for a recipe.
I've tried a few of the more popular clones that are floating around this and other sites...none of them are close IMO.

You don't mean you are avoiding the craft beers? I'm sure some people on this forum would kill for a shop that had more craft than commercial beers

BYO made a clone recipe for it, and there a number of "similar" recipes floating around on the forums. If you check out the recipe section under stout, you'll find them.

Look in my recipe dropdown and you will find my Gold Medal winning dark chocolate stout, decrease the bitterness by about 5-8IBU and increase the lactose to a full pound and you have Young's (My wife and I prefer mine over young's though).

..I think you confused the LCBO and the Beer Store as the same place. In Canada the Beer Store is where you can only buy Beer. The LCBO is where you find Liquer and wine.... but they have been rapidly increasing their stock of imported/ craft beer. They only sell commercial brands there.. IE: bud or Blue in 6-packs.
Hence why I said no more Beer Store for me... LCBO is the way to go.

BYO's clone is nowhere near young's IMO. I've had the same problem with a number of their clones. I have fairly good taste buds though, so I suppose other people might not notice as much.

Here's the recipe I used from BYO's 150 Classic Clones Issue
Youngs Double Chocolate Stout Clone
Batch Size (Gal): 5.00 Wort Size (Gal): 5.00
Total Grain (Lbs): 9.06
Anticipated OG: 1.051 Plato: 12.60
Anticipated SRM: 29.7
Anticipated IBU: 34.9
Grain/Extract/Sugar
% Amount Name Origin Potential SRM
-----------------------------------------------------------------------------
5.5 0.50 lbs. Golden Syrup (Partially Inver Great Britian 1.036 2
77.2 7.00 lbs. Pale Malt(2-row) Great Britain 1.038 3
7.6 0.69 lbs. Crystal 60L America 1.034 60
4.8 0.44 lbs. Chocolate Malt America 1.029 350
4.8 0.44 lbs. Carafa Germany 1.030 400
Hops
Amount Name Form Alpha IBU Boil Time
-----------------------------------------------------------------------------
39.69 g. Fuggle Whole 4.75 29.6 60 min.
7.09 g. Goldings - E.K. Whole 4.75 5.3 60 min.
Extras
Amount Name Type Time
--------------------------------------------------------------------------
12.00 Oz Lactose Other 15 Min.(boil)
0.33 Oz Liquid Chocolate Extract Other 14 Days(secondary)
6.00 Oz Cocoa Powder Other 15 Min.(boil)
Yeast
-----
Wyeast 1318 London Ale III
It's a bit complicated, but not too bad. Be careful with the cocoa addition, major boil over potential there. I also had a tough time sourcing the chocolate extract. As mentioned before it's not a great match for the real thing but a good starting point. If I did it again, I'd reduce the lactose and cocoa and perhaps increase the chocolate malt or add some black patent.
I took some to a summer BBQ and an ex-pat Brit buddy of mine couldn't get enough of it.

I have a double chocolate stout in my dropdown as well that a lot of folks like. Mine isn't a clone of Youngs, as I wanted something more chocolaty than theirs, but if you cut down the cocoa powder by about half, you'd be fairly close I think.
