Most everything I have read say Diammonium Phosphate, and some minerals, nutrients, and vitamins. Dead yeast cells often. I don't know what would make your cat go nuts though. It's like cocaine for yeast, so maybe cats too.

My cat is weird -- she likes the strangest random things.
If I've handled a lemon or orange, she goes nuts licking my hands and rubbing her head all over them. She likes the scent of bleach, too.
Strange.

That is odd. It must be something to do with oils. Our cat freaks out over Habaneros. Crazy Cat!

LOL, my cat likes feet, particularly little girl feet or socks. First thing my daughter learned to do was put her socks in the hamper.
