I mistakenly ordered White Wheat instead of the normal German Wheat. I've researched and can't seem to figure out the difference other than color. Can anyone tell me if there is a big difference? Can you use white wheat in place of red wheat in a hefe or kolsch with no difference other than color?

White wheat malt is the only wheat I use in my hefe's It will give a traditional yellow color.
