I've made quite a few wheat beers but only with German yeasts or S-05 for American styles. Just curious if anyone has tried S-04 and how were the results'? I may have to just give it a go.

Are you confident that you can get it to attenuate enough? American wheat that finishes high doesn't sound appealing to me personally.

I would try it. Could give a simple american wheat more character. You could call it an English wheat and you could use EKG to really make it unique. I'm sure it would be a fine beer, just different from the traditional styles.

I've made a 50/50 2-row/wheat 'American Wheat' ale with S-04. Both ended up near 1.010, so definitely not under attenuated. I think it makes a good wheat beer. The very subtle English esters compliment the wheat flavors I think.
