Wheat beer recipe - what do you say?
Hey guys, im going to brew a witbier soon and heres my recipe:
2.5 kg Pale ale malt.
1 kg German pilsner malt.
1 kg Wheat
0.2 kg munich malt.
0.2 kg caraMunich
30 g perle hops (60 minuts)
15 g saaz hops (15 minuts)
15 g saaz hops (1 minut)
1 bag of dried T-58 yeast
ABV (after botteling): 5.5%
Thats it.. if u have any advices or comments, ill be glad to hear :)
According to BJCP you should use more raw wheat in your grain bill. Personally, I would use some flaked oats instead of the munich and caraMunich malt. Also, your OG seems to be little too high.
Agree about ditching the munichs; with an srm of 8, it won't be a wit, since wit means white. The OG is a little above the guidelines (1.044-1.052), but not enough so to be worrisome. You didn't list orange peel or coriander, both of which are essential to a wit. I'm not a big fan of T-58, but you should be ok as long as you can ferment around 65 the first 3-4 days. If not, the liquid strains would be a better option.
that won't make a wit. wrong yeast & wrong grain bill, plus like kingwood-kid mentioned, you left out the spices. should make a decent belgian blond tho, albeit a lil smaller & darker
