What's Your Favorite Hefe Recipe?
|
|
Gonna be brewing my first straight-up Bavarian Hefeweizen on Saturday. Partial mash, of course. Now, it seems to me that everyone has a favorite hefe recipe that has produced excellent results for them...so why not throw your recipe up here so that I can get some good advice from experienced hefe brewers? If you wouldn't mind, that'd be very helpful...

A friend of mine brought down a corny of his hefe last weekend he has been perfecting for a while. Its damn good too.
3.0 lbs 2-row
1.25 lbs 6-row
4.5 lbs wheat
1 oz Hallatauer 60
single infusion of 153 for 60 minutes
Im not 100% sure which Hefe yeast he used, but it definitely had a slight banana nose.
Sorry its not a partial mash recipe

BJCP says that the non-wheat malt should be pilsner. Anyone tried this? I have a bunch of pilsner malt...so I figure, why not?

Guidelines??!!! We don't need no stinking guidelines!!!!
lol, jk....not really but yea jk. Like the whole hydrometer thing, I choose not to follow guidelines that far.
But the pilsner sounds great too. I say give it a shot. Seems like it should work really well.

Take all the wheat malt you own, add your favorite hefe yeast, place it in a strong sack, throw it in the trash, and then make a good beer.

If you must make a hefe, simple is better in my book. 50% Pilsner malt, 50% wheat malt and mellow hopping as you like.

I'm never one to fall in lockstep behind the BJCP either...but I suppose that those wacky Germans have perfected their craft over the years, and that they use Pilsner for a reason. Either way...here's what I have so far:
