The best rye beer I've had kept a very subtle hop profile, so you could really taste the rye. You should have pretty wide leeway in terms of the hop selection, but I'd err on the subtle side for flavor/aroma additions.
"I'm kind of toasted. But I looked at my watch and it's only 6:30 so I can't stop drinking yet." - Yooper's Bob "Brown eye finally recovered after the abuse it endured in Ptown last weekend, but it took almost a full week." - Paulie "no, he just doesn't speak 'stupid'. i, however, am fluent...." - motobrewer "... I'll go both ways." - Melana
I used Columbus & Chinook on my last Rye IPA. The hops gave it a slight oniony note which gave me a patty melt flashback. Was excellent like that but the onion faded quickly and I was left with a more normal beer.
