Default What do you think about these two recepies?

I'm planning to brew these two recepies, and as I don't know much about brewing software and I never used Late extract addition It would be great when some of you give me your opinions. Here they go:

SOFT GALENA IPA

Batch size: 20 L
Boil size: 10 L

1 kg Light Dry Extract (8SRM)
2 kg Light Dry Extract (8SRM) (Added in the last 15 min of the boil)
0'25 kg Crystal Malt (60 SRM) (120L) Stepped 30 min 70șC
30 gr Galena (13%) 60 min
25 gr East Kent Goldings (5%) 15 min
25 gr East Kent Goldings (5%) 7 min
1 Pkgs SafAle English Ale S-04
Irish moss 1 teaspoon 15 min

-------------------------------

SOFT GALENA STOUT

Batch size: 21 L
Boil size: 10 L

1 kg Light Dry Extract (8SRM)
2 kg Light Dry Extract (8SRM) (Added in the last 15 min of the boil)
0'25 kg Crystal Malt (60 SRM) (120L) Stepped 30 min 70șC
0'25 kg Roasted Barley (600 SRM) Stepped 30 min 70șC
27 gr Galena (13%) 60 min
10 gr East Kent Goldings (5%) 15 min

1 Pkgs SafAle English Ale S-04
Irish moss 1 teaspoon 15 min

-----------------------------------

I have some more Galena and East Kent, as well as DMS, Crystal and Roasted Barley so it would not be a problem to add some more.

Also, Do you think Irish Moss fits this styles?

I will brew this in one week. They will be three weeks in primary and three more weeks in the bottles.

Thanks to all.

I don't think Irish moss is very important with extract brewing.

I'd use 375g of the Roasted Barley in the stout.

Thanks Conroe,

As everybody who answered my question agree I will forget about the Irish Moss and increase the amount of Roasted Barley.

I will brew this in six days, so if someone can give another opinion about both recepies I will thank it a lot.
