Default What to do with old hops?

So I visited the Redhook brewery and got to talking with the tour guide about homebrewing. They had the obligatory ingredient samples out, including some hops.

The very nice tour guide offered to give me a mixed bag of the hops, which includes Cascade, Saaz, Willamette, and Hallertau (maybe Tettnag instead?). He said they have been out about 3 weeks at room temp and repeatedly exposed to air. I have a good 6 oz of these mixed hops, and who knows what the ratio is...

Can I do anything with these hops, or are they just done for?

I was hoping for/counting on them being ok for bitering still. Since I can't determine AA%, what should I assume it to be? I'd guess the mix is about 1/3 Cascade.

They're definitely 4.7% AAU

I would say they should average around 5%

5% sounds good. If I'm low, it'll be EXTRA hoppy Now I just need to think of a Redhook-homage name for the brew.
