Default What cherries would be best?

This is fermenting right now


I want pull off a gallon when it's done fermenting and rack it onto some cherries.

I'm also going to use two gallons for roasted and smoked hatch chiles.

the other two gallons will be bottled normal.

Oregon fruit purees are nice, frozen cherries are good too if you can afford them. You will need at least 2 lbs per gallon to just begin to taste them if you don't plan on using any extract to boost the flavor.

Variety? I dunno, I doubt you'd be able to taste the difference between any once the beer is finished.
