Default Thoughts on our Irish Red recipe?

This will be our first AG effort, hopefully this weekend.

Thoughts?

7 pounds UK 2-row pale malt
2 pounds crystal malt (40L)
1 pound wheat malt
.25 pounds flaked barley
.06 pounds chocolate malt
.25 ounce Fuggles (60 mins)
1.50 ounce East Kent Goldings (30 mins)
.25 teaspoon Irish Moss (20 mins)
.50 ounce EKG (flameout)
Irish ale yeast (Wyeast 1084?)

I was thinking of maybe substituting Munich for the wheat malt?

Thanks!

Looks good to me. I used far too much roasted barley in my Irish Red (1/2 lb.) and it looks like an Irish Brown.

I did an Irish ale using 1084 and wasn't very impressed with the yeast profile of the beer. Maybe my personal taste, but I wouldn't use it again. A bit too yeasty for my taste.

I think 2 lbs. of crystal is way too much. 1 lb. should be fine. If you are including the wheat and the flaked barley for head retention I would drop one and consider cutting the wheat back to 0.5 lb. Just my thoughts.

I'm doing an AHA Irish Red that has the following grain bill.

5.75# 2-Row
3.5# Munich
0.5# Crystal 120L
0.5# Caramunich

1.5 oz. Hallertau 60 min.
0.5 oz. Cascade 15 min.
0.5 oz. Cascade 5 min.

White Labs Irish Ale yeast.
