I think it was a good idea to switch back to a more traditional hop schedule since this is a somewhat experimental recipe. I decided to stick with boring yeast so it would be easier to compare it to other bipas i've brewed.

Here is what I changed to so far:

Batch Size 5.500 gal
Boil Time 60.000 min Efficiency 70%
OG 1.054 FG 1.014
ABV 5.3% Bitterness 59.8 IBU
Color 32.3 srm

Fermentables

Total grain: 12.000 lb

Pale Malt (2 Row) UK 10.500 lb
Chocolate Malt (US) 4.000 oz
Carafa III 8.000 oz
Roasted Barley 4.000 oz
Caramel/Crystal Malt - 60L 8.000 oz

Hops

Fuggles 4.25% 1.000 oz First Wort
Fuggles 4.25% 2.000 oz Boil 60.000 min
Fuggles 4.25% 1.000 oz Boil 30.000 min
Fuggles 4.25% 1.000 oz Boil 20.000 min
Fuggles 4.25% 1.000 oz Boil 15.000 min
Fuggles 4.25% 1.000 oz Boil 10.000 min
Fuggles 4.25% 1.000 oz Boil 0.000 s
Fuggles 4.25% 1.000 oz Dry Hop 7.000 day

Yeast

Safale S-05 Ale

I believe on youtube a guy named leedorham brewed a fuggles ipa. Homegrown hops. Very simple recipe but its something to kind of compare it to.

It was pretty good....before I dry hopped it. The woody/spicy flavor is a bit over the top now. It seemed pretty well balanced before DHing.

Next time (if I end up scoring the free fuggles again next year) I'll maybe skip the DH or use .5 oz for only a 2-3 days.
