Pliny the Elder is dryhopped for 12-14 days, albeit in three to four incremented stages. However, I dryhopped an IIPA before for 12 days in one stage with excellent results. No grassiness and you could smell the pleasant fruity, citrusy aromas from as far as 4 ft. away from the pint. Why not meet somewhere in the middle of 5-14 such as 8-10 days?
Agreed on checking your boil off volume. I personally dislike the Victory here. Would swap it with 2-row while lowering the OG a bit, and adding another late hop like Simcoe or Amarillo.
