Default suggestions for belgian dubbel?

I love estery belgian dubbels. I particularly like Grimbergen. I made a kit from northern brewer (their double). Its good but not what I was looking for. Does anyone have a rich belgian dubbel recipe that they can suggest that has been tested?
I dont have the set up for all grain so it would have to be partial mash or extract/steep.

edit.. I have a 1214 yeast cake that I washed and saved yesterday

Go with Pilsner malt or extract
and a little munich malt or extract
Use some 'B' in the steep
and a bit of candi syrup after the boil

NB for your bittering,
and some Saaz or some Styrians at the end

Maybe some at 15 and some at 2

Pick a belgian yeast from WYeast or WL

You could go with T-58 and Pitch at about 64F and let ramp up in an ambient temp of 70F

Maybe some chocolate or a tiny bit of roasted in the steep.

Remember a good double has a simple recipe, but a very complex flavor.

I brewed up the Beglian Dubbel from Northern Brewer too..

let it sit in my primary for a month.. secondary for a month.. just bottled it a week ago and cracked one open yesterday..

I was pleasantly surprised. A little strong.. but tasted like a Dubbel.

I'd guess that its not too hard to convert it from extract to PM.. maybe use 4lbs of Pilsner or something
