You'll be very happy. Simcoe and Amarillo are delicious, either in single-hop beers or together. I just tapped my single-hop Amarillo IPA, and its delicious. A little different grain bill - I used Rahr Pale Malt for most of my base instead of 2-row, and I used more of it, so my ABV is ~7.5%. You could consider a flavor addition with 10 minutes left, but its your recipe, so if you'd rather keep them all for the end just for aroma, that could work too.
