looks like a tasty recipe, and I have to plead my ignorance, but looks like there are 2 sub categories one the o fest the other a Vienna. I don't know the difference but I'm trying to make a beer that is labeled Vienna.
I'm confident this is a good oct. but does anyone have a take on the Vienna style?

Using 2 WLP940 vials in a 3L starter to get the fermentation off to a quick start. Adding 4oz of dextrose to the boil to lighten the body and finish a little crisper than last time.

This is my adaptation of Austin Homebrew's Dos Equis clone kit. I made it once before (omitting the included maltodextrin) and ended up with a very fine Negra Modelo-like beer. Hopping was a little light and the malt body a little more pronounced than I would have like so I made some changes, upping the IBUs and adding a little corn sugar to lighten the body. In the first version I used Wyeast 2124 Bohemiam Lager yeast. In this one I'm going with WLP940 Mexican Lager, which I hope will get me closer to the amber cervesa I'm shooting for.
