Default Scottish Ale

I cam up with a recipe for a sort of Scottish Ale. I was going for a historic type brew, but this is what I came up with:

OVTA Ale

Recipe Specifics
----------------

Batch Size (Gal): 5.25 Wort Size (Gal): 5.25
Total Grain (Lbs): 7.25
Anticipated OG: 1.044 Plato: 11.00
Anticipated SRM: 18.4
Anticipated IBU: 21.3
Brewhouse Efficiency: 75 %
Wort Boil Time: 60 Minutes

Grain/Extract/Sugar

% Amount Name Origin Potential SRM
-----------------------------------------------------------------------------
6.9 0.50 lbs. Molasses Generic 1.036 80
6.9 0.50 lbs. Turbinado Sugar Generic 1.046 0
13.8 1.00 lbs. Muntons DME - Light England 1.046 5
55.2 4.00 lbs. Pale Malt(2-row) Great Britain 1.038 3
3.4 0.25 lbs. Chocolate Malt America 1.029 350
13.8 1.00 lbs. Crystal 60L America 1.034 60

Potential represented as SG per pound per gallon.

Hops

Amount Name Form Alpha IBU Boil Time
-----------------------------------------------------------------------------
1.00 oz. Fuggle Whole 5.00 21.3 60 min.

Extras

Amount Name Type Time
--------------------------------------------------------------------------
1 gram Grains of Paradise Spice 15 minutes(boil)
0.00 Oz Irish Moss Fining 15 Min.(boil)

Yeast
-----

White Labs WLP028 Edinburgh Ale

I have never user turbinado, or molasses before. Do these amounts seem resonable? I don't want the molasses to totally dominate the brew. Does this seem like a reasonable recipe?

At half a pound, the molasses will be a very strong flavor component in the finished brew.

...and molasses takes a while to mellow out.

OK I brewed this, but put in 1 lb of the turbinado and a few tablespoons of molasses. I og was at 1.041, fg at 1.010. I bottled 3 days ago, I tasted it ... and yes I know it is still way to early to tell anything, but it was pretty sweet. Is this just because it is still so green, or did I just way under hop this beer? I've never tried a scottish before, so I'm not sure if it is supposed to be this sweet or not. Do you think that the sweetness will die down some with more time?

And yes I know, its still way to green to tell what the final product will be, but I have never had one of my beers taste sweet before.
