Default sans le chat (from wild brews)

i can't find any record on the internet of anyone having brewed this beer from Wild Brews. it's a fairly short fermentation for an all brett beer, so it intrigued me for my first attempt at a funky beer. anyone have any experience or comments?

OG 1.062
pilsener malt 90%
wheat 5%
acidulated 5%

20 IBU williamette for bittering

.25 oz/5 gallon williamette @ 2 minutes

WLP650 and/or WLP653 @ 65* for two weeks
secondary 2-4 weeks @ 55*

Sorry to resurrect a dead thread, but I figured I'd weigh in on this.

I stumbled on this thread a few months ago as I was reading wild brews for the first time. I just botteld this batch yesterday. I ended up using Jolly Pumpkin Dregs (no "normal" yeast strain to start, just the bugs). It developed a nice sourness shockingly fast (see the other threads on JP dregs for more information on this).

I think this is a great first voyage into sour beers. The recipe is not complex, and the turnaround time is not somthing you need to wait a year or more to be done. Based on how the hygrometer sample tasted, I suspect I will keep brewing this one for a long time!
