Default Rye Saison with Sorachi Ace(Please Critique)

I've had both Brooklyn's Sorachi Ace and Flying Fish's Exit 6. My wife was a big fan of the Exit 6, so I would like to try to make something similar. Planning on using the WLP670 American Farmhouse if I can find it, otherwise Wyeast 3711. For the sugar was planning on making my own candi sugar or maybe just regular table sugar. I will be making it brew in a bag.

Looks good to me, although if you want to taste the hops I'd probably skip the Brett in American Farmhouse and go with 3711 (if you do American Farmhouse you may want to add a small dry hop for a week before bottling).

If you wanted a bit of sour like the brett could give off, you could add in a few ounces (and I do mean few 3 or less?) of acid malt.

Is the hop schedule equivalent the Brooklyn or Flying Fish? I haven't tried these beers, but for a Sorachi Ace beer, I would have expected more Sorachi Ace in there lol. say another addition at 5min. But that was just a curiosity. There is nothing wrong with your hop schedule and I was only suggesting/me being curios and nosey.

It looks interesting and most likely very tasty. Let us know how it goes!

wow, didn't see this thread until now but I just picked up 9# of belgian pale, 1.5# of wheat and .5# of oats along with 2oz of Sorachi ace, 2lbs of clear candi sugar and a vial of WLP670....

....also for BIAB

Brewed this with a bit of a change in hops:
90 Min Boil
FWH - 0.5 Nelson Sauvin
30 Mins - 1.0 Saaz
5 min - 0.5 Nelson Sauvin
5 min 0.5 EKG
0 min 1.0 Nelson Sauvin

So far the beer taste great. A nice white wine/grape taste to go with the dupont yeast and a little funk. Wife thought the hydro sample was a bit oily, maybe the rye. Going to dry hop with another ounce of Nelson Sauvin.

So far very happy with what I've tasted.

Already pondering a bit of rosemary, sorachi, and nelson sauvin for an easter beer with lamb.
