Default rosemary and sage

Well, I decided to use rosemary, sage, and tarragon in a Christmas beer without doing any research on how much is appropriate. Also I used 2 vanilla beans and orange peels that were lightly baked, and a pound of brown sugar.

I used 5 sprigs of tarragon and what looked like an equivalent amount of the other two herbs in a 5 gal batch. Brown sugar add with 5 minutes to go, all other ingredients added at flameout.

The OG, 1.082, tasted great but from what I have read, I figure I’m screwed... If anyone can prove me wrong I would love to hear what you have to offer.

So what happened? I have soem sage growing profusely from this warm March and was thinking of adding to my next batch. Would love to hear of your results.
