Default replacement for safale-05 ?

For my 2nd brew I'm attempting the all-amarillo ipa posted here.

Only problem is my lhbs, which isn't even local didn't have safale-05 yeast. So I grabbed a packet of Nottingham and a Windsor.

Which,of those two would be a better replacement for that recipe do you think?

Nottingham is what I would use (it's my go to yeast). Windsor doesn't attenuate quite the same as S-5 or Nottingham.

Use the Notty... Windsor is estery and fruity... you want a clean strain like S-05, use the Notty. You can use WLP001 as well.

Notty sounds good. It is what I used for the first batch and so far so good there.

also, isn't it true that nottingham has a wide(r) temp range for fermenting? a lhbs guy told me 14-24 C.

Nottingham goes down to like 58F or so... it is VERY versatile.

You can use Notty at super low temps to do hybrid lager like ales. Very clean at the lower temps.
