maris otter is very rich to me. i wouldn't dig it in a sessionable beer. i'm in to fruity hops on lighter grain bills for session beers so here's my idea for something simple.

simple pale ale

6# pils
5# vienna
0.5# C60

0.5oz cascade @ 60
0.75oz cascade @15
0.75oz centennial @15
0.75oz cascade @5
0.75oz cascade @5

mash at 150, boil for 90minutes.

you could swap in any fruity hops and this would be decent. citra and centennial would be my next attempt. also deliberating adding amarillo to the mix.

basic hop schedule is 60/15/10/5. i like to get up to 50% of my total IBU's from the 60/bittering addition. the rest i'll pickup in the late additions. the other way to think about it is to throw IBU's out the window to an extent. hit your desired IBU with the 60 minute addition and then add however many ounces in the flavor additions. in my experience a pale ale will get by with 2 ounces of hops, an IPA with 4-6 ounces using this hop schedule.
