Default raw wheat cereal mash

i was just given about 5 pounds of raw wheat grain that was farmed and harvest about 20 miles from my house. i am looking for a good explanation of the "cereal mashing" process. i did several searches and didnn't find what i wanted. this guy made an incredible belgian wit using 40% raw wheat. it was outstanding.
