4 1/2 lbs white wheat malt
4 1/2 lbs american 2 row
1/2 lb rice hulls
Yeast of your choice (american ale,or a more fruity german wheat strain
1 oz Hallertau hops 4% @ 60 min.
4 0z.bottle of Raspberry extact to the bottling bucket at bottling time!
Simple but good!

6.5 lbs 2 row
1 lb wheat malt
.5 lb crystal 40
1/4 oz northern brewer @ 60
1 oz fuggles @ 30
1/2 oz fuggles @ 15
wyeast 1028 london ale
4 oz rasberry extract at bottling

still one of my fav rasberry wheats

I believe everyone is suggesting the extract, causing using fresh berries, especially raspberries, can be very tart and take awhile to mellow out. Extract can just be added and ready to go in a couple weeks.

I have done both and the extract gives a artificial flavor. I prefer fresh Raspberries or Oregon Fruit Puree. IF you go fresh I recommend #1-#2 per gal.

There are lots of other raspberry wheat recipes in the hbt recipe database, its a great resource - I use it all the time, even if its just for inspiration.

With fresh, i would suggest using no more than 1lb/gal, since they're a "strong" fruit. My the ones i have made at 1lb/gal or greater are too heavy on the raspberry flavor.
