Default Quilters Irish Death Clone?

I've had a few of these beers now, only really available for those of us that live in WA....and I'm completely hooked! Would love to try and brew a clone, but haven't really found anything on the net, save for this:

haha i used to date a girl out in ellensberg, and every time i was out there i would pick some up, i just happened to move right as they started shipping around the rest of washington.
Seeing as the Quilter's you'll commonly be buying is only 7.8 ABV, i think that this recipe you found would be for the original recipe by Jim Quilter, when he developed it as a Barleywine.

Talks about it a lil on their under the comments.
Maybe if you took that recipe to a calculator and just toned it down to 7.8?
I sent the a letter a week or so ago asking if they had any tips towards making a clone of the Irish Death
If they write back hopefully it will be useful towards putting this recipe together!

I emailed iron horse and asked them if they would share the recipe and this is what they sent me back in reply. However I can't find any notes on the ibu's! I happened to save the yeast from a couple 22s I bought so yeast won't be a problem. I am going to toy with it and throw up a recipe any help would be great, I want to make this in the next week.

2 row, crystal 75, munich, caramel pilsen, flaked barley, chocolate, roasted barley, black patent malt. columbus, cascade, and mt hood hops.

That looks like a great recipe, but I can't figure out why Northwest hops would be used in an Irish ale recipe

Ya, I agree completely. Irish death isn't very hoppy, the smoothness/sweetness of malt is the gold star in this beer. I would prob take out a half oz of cascade that goes into the boil at 60min. Maybe decrease cascade .25oz also? That might be pushin it. The grain bill looks pretty nice though. Like bottlebomber said, its gonna be tough to clone this with just that info lol. I'm not the best at visualizing a brew by the recipe, but if it were me, I might add a little extra flaked barley to emphasize the silky feel of it. Let us know how it turns out, and what the recipe you did looks like! I'm pretty excited to see how this goes!

So how would you guys do the hop additions? Would you do 1 oz Columbus for 60 and maybe .5 cascade for 30 and 1 oz Mt hood for 10 mins? Or what give some ideas

I was thinking .5oz columbus for 60, .5-.75oz cascade for 30 (or 45?) and 1oz Mt hood for 10.

The biggest decrease should be in the hops that will be in the longest, since it's those hops that will be doing most of the bittering.
