Default Quick question on gelatin use

I searched but there are a ton of threads that mention gelatin so I thought I'd just ask some quick questions. I know you are not supposed to boil it. My questions are a) is it okay to just use regular unflavored gelatin found in a grocery store and b) how much do you use, the whole packet?

I use gelatin rarely as beer clears well on its own given enough time. But if I'm in a rush to keg something and have it pretty clear within 2-3 weeks, I'll use 1 packet of knox gelatin (normal, unflavored stuff from grocer's) for 5g. Works well...
