Default Please help me substitute Weyerman malts for Maris Otter

Hello

I want to brew some English ales, but can not get any Maris Otter Malt. I can only get Weyerman malts, and not all of them.

I have my eyes on these two recipies:

Hobgoblin clone by Orfy
4.80 kg Marris Otter Pale
0.25 kg Caramel/Crystal Malt
0.20 kg Cara-Pils/Dextrine
0.15 kg Chocolate Malt

And Mild Mannered Ale, also by Orfy
3.00 kg Pale Malt, Maris Otter (3.0 SRM) Grain 76.9 %
0.75 kg Crystal Malt - 60L (Thomas Fawcett) (60.0 Grain 19.2 %
0.15 kg Chocolate Malt (Thomas Fawcett) (508.0 SRMGrain 3.8 %

Is the Weyerman Pale Ale malt a good substitute for Maris Otter?

Would it make sense to try to taste up the Weyerman Pale by mixing it with say Vienna?

This is what I have worked out so far, the colour is probably off, but I am more concerned about a balanced flavour.

Hobgoblin clone:
3 kg Weyerman Pale Ale 3L 56%
2 kg Vienna Malt 3.5L 36%
0.25 kg Caramel/Crystal Malt - Caramunich® I 35L 5%
0.15 kg Chocolate Malt - Carafa® Type 3 320L 3%

And Mild Mannered Ale, also by Orfy
2 kg Weyerman Pale Ale 3L 51 %
1 kg Vienna Malt 3.5L 26%
0.75 kg Crystal Malt - Caramunich® I 35L Grain 19.2 %
0.15 kg Chocolate Malt- Carafa® Type 3 320L Grain 3.8 %

Hopping would be according to the original recipies.

Try Victory or Biscuit malt... .5 to .75 lbs for a 5 gallon batch

Sorry, but those are not available here in the land of cheese, wathces and chocolate. But the FAQ on the Weyerman site recommends melanoidin malt as a substitute for Victory.

Are you suggesting I change it like this (I already had the lightest Caramunich in there so I discarded the Vienna and raised the Caramunich by 5%, but I can also get Carared 17L or Caraamber 26L):

0.5 kg Caramel/Crystal Malt - Caramunich® I 35L 10%
0.15 kg Chocolate Malt - Carafa® Type 3 320L 3%

1 kg Crystal Malt - Caramunich® I 35L Grain 24 %

Ok thanks. But what would you say about this grain bill for the Hobgoblin clone?

4 kg Wienna 78%
1 kg Carared 17L 19 %
0.15 kg Chocolate Malt - Carafa® Type 3 320L 3%

From the Weyerman site:
Use:
* Red Ale
* Red Lager
* Scottish Ale
* Amber Wheat
* Bock Beer
* Brown Ale
* Alt Beer
Result:
* fuller body
* improved malt aroma
* >deep saturated color
* red color
It can take up to 25% of the grain bill.
