Help! I am brewing tomorrow. Had planned a hefe with WLP 300 I had saved frozen on glycerol, but it's been 24hrs and no activity in the starter. I'm going to hold on untill tomorrow and see what it looks like, but I need a recommendation for a back up brew. I have Briess two row and Rahr white wheat available with WLP 029 Kolsch yeast in the fridge but no time or materials to make another starter. I have US05 and Safale s-04. I have a Wit in primary about 10 days old still bubbling away. Should I pitch the Hefe on the WLP 400 in the Wit primary, or make a kolsch without starter, or make something with the dry yeast or go fishing instead of brewing?
