Stone Coast Brewing in Maine used the Mt. Hood and Willamette combo in one of their brews. That's why I was thinking that combo, at least with what I have one hand.

And yes.. Amarillo is one of my favorites

2lbs of crystal malt is a lot even though it is very light crystal. I actaully prefer my Pale Ales to be without crystal malts.

Well we're off and running, the fermenters are bubbling away (activity within hours). I ended up sticking with the Mt. Hood and Willamettes combination and so far the results seem very promising. My initial testing was very smooth and a very pleasing aroma.

We'll see how the next few days goes.
