Default OG on Brown Ale is 1.100?!

Ingredients Amount Item Type % or IBU
3 lbs 2.9 oz Light Dry Extract (8.0 SRM) Dry Extract 38.22 %
3 lbs Amber Dry Extract (12.5 SRM) Dry Extract 36.06 %
12.8 oz Caramel/Crystal Malt - 80L (80.0 SRM) Grain 9.62 %
8.0 oz Biscuit Malt (23.0 SRM) Grain 6.01 %
8.0 oz Cara-Pils/Dextrine (2.0 SRM) Grain 6.01 %
3.2 oz Roasted Barley (300.0 SRM) Grain 2.40 %
2.2 oz Chocolate Malt (350.0 SRM) Grain 1.68 %
1.00 oz Cascade [6.40 %] (60 min) Hops 16.8 IBU
0.50 oz Cascade [6.40 %] (20 min) Hops 5.1 IBU
0.50 oz Cascade [6.40 %] (10 min) Hops 3.0 IBU
0.50 oz Cascade [6.40 %] (5 min) Hops 1.7 IBU
0.50 oz Cascade [6.40 %] (1 min) Hops 0.4 IBU
1.00 gal Terre Haute Water
4.00 gal Distilled Water Water
1 Pkgs Nottingham Yeast (Lallemand #-) Yeast-Ale

Est OG is 1.065, the amber DME is a late addition at 15 minutes. I've brewed about 50 gallons this year so far, so i'm no noob. I know this is a noob problem. I added all 5 gals to the boy, and shook it. I took the reading in my thief and it read 1.100. So, i tapped the tube and bobbed the hydro a little, no changes. so i get another sample in the theif, making sure its floating. same exact reading. tapped for bubbles and whatnot. i made sure i was reading the correct side of my hydro. i dont konw what the hell happened.

another thing, this is kinda like the kitchen sink brown ale. lots of special grains. anyone think any of these are not necessary? maybe i can subsitute some or something. i like complexity, and i'm doing what i can with my extract situation.

thanks for the help!

You likely did not get it fully mixed because your ingredients don't add up to 1.100. It looks like a pretty good recipe though.
