oatmeal honey porter? extract+partial mash

hey there,
I picked up a kit from my LHBS for a fairly straightforward porter:

8lb amber dme
1lb black patent malt
1.5oz Northern Brewer (60min)
1oz Tettnanger (2min)
White Labs Euro. Ale Yeast

I'm considering replacing a pound of the amber dme with a pound of honey and adding the honey late in the boil. I'm also considering throwing 2 packets of plain instant oatmeal in with the black patent.

My goal here is simply to add a little more curiosity to the flavor profile. I've had a great honey porter before, and I've also heard good things about an oatmeal porter. I don't want this to be a overly sweet porter or anything, I just want a little higher level of intrigue to it. This is my first porter.

Does anyone have any thoughts on this? Your help is greatly appreciated.

This probably doesn't help too much but I would not use instant oatmeal...I just feel this may be a bad idea. Try using a good european oatmeal from your grocery store. Hope it turns out well.
