Default Noble Hopped PA/Altbier?

I been thinking of doing and German Malt/ German Hopped (except bitter hop), and made a recipe which kind of fits a Altbier except for all the late additions, but I was wondering if you guys have experience with using a lot of noble hops for a real hoppy pale ale. Any feed back would be great here's the recipe.

6.0lbs Vienna
4.5lbs Munich
8oz Caraform
8oz CaraRed
1oz Carafa III


60 mins .75oz Nugget
30 mins .5oz Hallertau
15 mins 1oz Hallertau
15 mins 1oz Saaz pellet
5 mins 1oz Hallertau leaf
5 mins 1oz Saaz pellet
dry hop 1.5oz Hallertau

And I was thinking 1056 American Ale maybe a Kolsch yeast?


But it should be 1.052og, 12 SRM, and around 50 IBU's

Why not brew an altbier? Some of those are up to 60 IBUS and they do have some late additons. Very similar to what you have except uses an Alt yeast.

I think your recipe is fine however, b/c it sounds like you know what you are going for taste wise but I think the alt yeast would give you a more "german" character.

Well, I was kinda of thinking a yeast thats clean, but lets the hops shine, which both of those do, and I have those two on hand, but I guess I dont know about German Ale yeast either. Ill have to look into it since Im def. not opposed to picking some more up.
