Need some Scaling help!

So we scaled our Porter recipe from 3.5gal to 15gal and all turned out well, then we scaled our 15gal to 30gal and all DID NOT turn out well. IMO, we lost some of the color darkness, some roastiness and the hop profile was too strong. What I try to do when I scale recipes is basically double everything then fine tune the grains so that I hit the same stats as the smaller batches.
