Need critique on my spiced winter warmer recipe
Hey all - never brewed a high-abv winter warmer type of beer, so I wanted some input on my recipe:
3 gallon batch
4% Amber Candi Syrup
2% Chocolate Malt
Bittered to 44 IBU Tinseth
60 min. Northern Brewer Hops .8oz
10 min. Hallertauer Hops .5 oz
1 Cinnamon stick at flameout
.25 teaspoon sweet orange peel at flameout
Vanilla - not sure if I'm gonna use beans, extract, etc. or when I'm going to add yet...
Haven't decided on a yeast yet, but I'm thinking something Belgian...
Looking at the recipe now, I think I may have too much caramel/dark malt.
I'm going for a beer that has a good malt and spice flavor and aroma, with a touch of alcohol flavor to go with it. I went for 40 IBUs because I don't want it to be too sweet but I don't really want too much hop aroma either.
I wouldn't change to much. It looks good.
For example, here's mine:
Amt Name Type # %/IBU
25 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 1 58.1 %
2 lbs Caramel/Crystal Malt -120L (120.0 SRM) Grain 2 4.7 %
2 lbs Honey Malt (25.0 SRM) Grain 3 4.7 %
1 lbs Chocolate Malt (375.0 SRM) Grain 4 2.3 %
1 lbs Roasted Barley (500.0 SRM) Grain 5 2.3 %
1 lbs Victory Malt (25.0 SRM) Grain 6 2.3 %
6 lbs Light Dry Extract (8.0 SRM) Dry Extract 7 14.0 %
5 lbs Candi Sugar, Clear (0.5 SRM) Sugar 8 11.6 %
4.00 oz Magnum [16.70 %] - Boil 60.0 min Hop 9 67.3 IBUs
2.00 oz Orange Peel, Sweet (Boil 5.0 mins) Spice 10 -
2.00 g Seeds of Paradise (Boil 5.0 mins) Spice 11 -
0.50 oz Allspice (Boil 5.0 mins) Spice 12 -
0.50 oz Cinnamon Stick (Boil 5.0 mins) Spice 13 -
0.50 oz Clove (Boil 5.0 mins) Spice 14 -
2.0 pkg Irish Ale (Wyeast Labs #1084) [124.21 ml] Yeast 15 -
5.00 lb Cherry, dried (Secondary 2.0 weeks)
If you ferment it warm you'll get a little ester out of it. A belgian will work too though.
25lbs base malt? How many gallons is your batch? Gotta be 10 at least
Yep I do ten at a time
Appreciate the info. I think I'll go with the Irish yeast too.
I ended up adding a little victory malt.
Decided to leave out the spices for later so that I can add them little by little as a spice tea.
And for hops I ended up doing a 60 min. of Northern Brewer and a 15 min. of Saaz for 50 IBU.
