My American Wheat

Ok, it's time again for my daily affirmation!
I'm attempting to design an American Wheat, maybe trying to coax some warm weather to finally show up here...
Type: All grain
Size: 3 gallons
Bitterness: 24 IBU
OG: 1.056 FG: -
Grain:
2 lb. British pale
3.5 lb. Wheat malt
8.0 oz. German Vienna
8.0 oz. Dextrine malt (Cara-Pils)
Mash: 69% efficiency
Boil: 60 minutes SG 1.040 4.25 gallons
Hops:
.30 oz. Perle (8% AA, 60 min.)
0.25 oz. Hallertauer Hersbrucker (5% AA, 15 min.)
0.25 oz. Saaz (3.75% AA, 15 min.)
0.25 oz. Hallertauer Hersbrucker (aroma)
0.25 oz. Saaz (aroma)
Yeast: Wyeast 1010 American Wheat
I'm shooting for a hoppy and spicy brew and I'm considering substituting the Perle hops with Cluster or Challenger if the LHBS carries them... Thoughts on the overall recipe?
Thanks!
