Default Looking for a malty recipe

The last two batches I've made have been pale ales. I'm in the mood for something maltier. Ive been doing mini-mash recipes so far, but I'm gearing up for the move to all grain. Any ideas for a malty recipe? It can be either mini-mash or all grain, just nothing too complicated.

I'd also prefer to do an ale, since Texas weather can be a roller coaster ride as far as temps go. Taste wise I'm thinking something along the lines of a Sam Adams Boston Lager (I know it's not an ale) or a Pete's Wicked Ale.

Any suggestions would be appreciated!

i would go with a scotish 80 shilling

4.5# 2-row
2.0# munich
2.0# vienna
1.0# victory
4.0 oz. crystal
4.0 oz. roasted barley
1.2 oz. fuggles 90 min.

I made an amazing old ale a while ago. IIRC...

10lb 2 row
.75lb 60 caramel
.75lb 80 caramel
.5 lb 120 caramel

1lb dark brown sugar end of boil.

2oz Northern Brewer 60 min

English ale yeast of your choice (used Wyeast 1450-PC Denny's Favorite 50)

After two months of aging, it is drinking very well. Lots of malty, toffee like flavors with a nice undertone of dark fruit.

Sam Adams is nothing more than 2-row and crystal 60L and so is Bud ale.
