Default Looking for Kolsh recipe!

Looking to brew a Kolsch recipe as i have read to many good things about this type of beer to not try 1. I am a grain extract brewer and can get both white labs and wyeast yeasts. I do have a WLP#830 yeast cake available to pitch on , but don't know if this will work for a Kolsch? Thanks ahead of time

Here is the one I made (basically NB's kit). It was probably one of my best beers to date.....loved by everyone.

Kolsch:
  • 6# Gold LME
  • 1# Laglander DME
  • 1.5oz Hallertau (60)
  • 0.5 Hallertau (5min)
  • WY#2565 Kolsch

I just brewed this recipe for the first time but its still fermenting. I used White Labs German Ale yeast.
I just tryed Shiner Kolsch and it is a very clean summer style beer I liked it!

5 lbs. light unhopped malt extract
Steep these malts for 30min @ 165F
2 1/2 lb. German pilsner malt
1/4 lb. German light crystal malt
1/4 lb. German Melanoidin malt
1 1/2 oz. Hallertauer hops (bittering) 45 min
1/2 oz. Hallertauer hops (flavoring) 15 min
1/2 oz. Hallertauer hops (finishing) End of boil
1/2 tsp. calcium chloride
Yeast options: 1 pkg. Nottingham Ale Yeast(Wyeast #1007, #2565, #1338 or White Labs German Ale or Dusseldorf Alt Yeast)
1 pkg. Bru-Vigor (yeast food)
O.G. - 1.048
F.G. - 1.012

How about this partial mash?

crush 3 1/2 Lbs lager malt and 12 oz carapils malt
Heat 1 1/2 gallons water to 164f
steep/mash grains at 152f for 90 minutes
Sparge 2 1/4 gallons of 168f water
Add 2 Lbs extra-light un hopped DME
Bring to a boil
Add 4 AAU's Spalt hops
Boil for 45 minutes then add 2 AAU's spalt.
Boil 5 minutes and chill
Top up with water to make 5 1/4 gallons of wort
When wort is about 64 to 68f pitch Wyeast 1007, 2565
Ferment at 65f for 2 weeks, rack and condition cool for 3 to 4 weeks
Prime with 3/4 cup corn sugar or your choice of primming agents.

I recently did an all grain version of this recipie amd it is conditioning now. Initial tasting shows a lot of promise with this one using the Spalt hops.

OG 1042 Fg 1008 15 IBU
