How about this partial mash?
crush 3 1/2 Lbs lager malt and 12 oz carapils malt
Heat 1 1/2 gallons water to 164f
steep/mash grains at 152f for 90 minutes
Sparge 2 1/4 gallons of 168f water
Add 2 Lbs extra-light un hopped DME
Bring to a boil
Add 4 AAU's Spalt hops
Boil for 45 minutes then add 2 AAU's spalt.
Boil 5 minutes and chill
Top up with water to make 5 1/4 gallons of wort
When wort is about 64 to 68f pitch Wyeast 1007, 2565
Ferment at 65f for 2 weeks, rack and condition cool for 3 to 4 weeks
Prime with 3/4 cup corn sugar or your choice of primming agents.
I recently did an all grain version of this recipie amd it is conditioning now. Initial tasting shows a lot of promise with this one using the Spalt hops.
