Just take your favorite IPA recipe and replace the base pale extract (or grains) with wheat. Or take a wheat beer you like and hop it out. Both sound fun. New recipes. Good times. Profit.

Made one the other day. It was 6# 60/40 wheat LME and handfulls of cluster late in the game. Handfulls instead of ounces because I did not bring my scale.
Think there was about 5 1/2 ounces in the bag when I started and I left about an ounce to dryhop

Here's one of mine. It's for 15 gallons so scale accordingly. Replace the rye with wheat if that's not your thing:

Summer Wheat & Rye
11 lbs Wheat Malt 35.48 %
6 lbs 12.0 oz Pale Malt 21.77 %
6 lbs 12.0 oz Vienna Malt 21.77 %
1 lbs 8.0 oz Crystal Malt - 20L 4.84 %
1 lbs 8.0 oz Rye Malt 4.84 %
1 lbs 8.0 oz Rye, Flaked 4.84 %
1 lbs 8.0 oz Wheat, Flaked 4.84 %
8.0 oz Aromatic Malt 1.61 %
2.50 oz Cluster [8.30 %] (60 min) 27.9 IBU
1.00 oz Ahtanum [4.50 %] (2 min) 1.1 IBU
1.50 oz Amarillo [9.60 %] (2 min) 3.2 IBU
1.50 oz Palisade [8.40 %] (2 min) 2.8 IBU
4.00 oz Palisade [8.40 %] (0 min)
SafAle English Ale (Fermentis #S-04) Fermented warm (>70F)

American Wheat/Rye is one of my regulars.

40% Wheat
40% 2-row
10% Rye
10% Sugar
Chico Yeast (US-05, Wy1056 or WPL001)

5% ABV
40 IBU (mostly Amarillo)

We drink it all year round, but it's a great summer beer.
Brewing a batch this weekend.

I brewed a great recipe last summer based on New Glarus Crack'd Wheat. Amarillo and Cascade for aroma, equal parts pils/wheat, bit of CaraVienna to leave a hint of sweetness.

Planning on doing something similar in a few weeks. I'll make 8 gallons of ~1.050 wort, take 5 gallons and hop with Riwaka and ferment with 3068, then take 3 gallons and water it down to 1.030, hop with Amarillo and Nelson Sauvin, and ferment with 1056. Should be nice to have two different takes on hoppy wheat beer.

Here's the one I brewed a little while back - need to make it again, since the wife says it's her favorite beer I've ever made. Next time I'll probably sub something neutral like Magnum for the Simcoe (just sort of a waste to use Simcoe for a 60min addition), and you may have trouble finding Citra right now...

none of the recipes mentioned (though they sound awesome) using Saaz... I'd probably use a ton of saaz in late addition/secondary with a wheat beer since the Saaz has such a spicy profile it'd work well with the phenols from a hefe yeast.

I've heard from others this works well if you like the spiciness of the saaz.
