Hey guys, im brewing a simple wheat beer, I haven't decided if I am going to make it a cherry wheat and add some locally grown/canned cherries (not pie cherries but canned with no sugar added) in the secondary. I do smaller scale BIAB batches on the stove mostly because I dont drink that much, so I can brew more! :rockin: My last few batches have gotten 72% efficiency so I use that number.

I am mainly looking for advice in the ingredients (if anything should be added) or mash/protein rest times/temps

2.5 gallon batch

Malt

1.5lbs 2 row
2lbs white wheat malt
.5 lbs munich malt (love it)
.25 lbs carapils

Hops
.5oz Tettnang at 60mins
.25oz Tettnang at 15mins
.25oz Tettnang at 5 mins

Yeast
Wyeast American Wheat (1010)

Protein rest at 125 for 15 mins
Mash at 152 for 60 mins
Raise temp to 170 over ~10mins

Estimated OG 1.048
Estimated FG 1.012

This looks like a pretty good recipe. I would probably do more like 60/40 wheat/malt because I like to emphasize the wheat character but your 50/50 recipe (I don't count the carapils) should turn out nice.

Thanks, what about Mash time/temps? Would this recipe benefit from a protein rest? I included it but didnt really know
