S-05 Safale - American Ale Yeast

I used some Victory in a Pumpkin Ale and liked the biscuity flavor it added, so decided to try it here. Munich to add a bit more maltiness.

I was considering eliminating the Crystal 40 ... I don't like IPAs that are too sweet.

All advice appreciated.

Thanks!

Why first wort the summit? I would move the Ahtanum Hops there instead. Also would consider involving Citra instead of Simcoe. Seems like you would want more citrus flavor and less pine...

I think your grain breakdown is really interesting. You will have to let us know how it turns out. Havn't used victory in a IPA myself.

Looks solid I love ahtanum with simcoe. Not a big fan of victory but that's just my palate.

Looks good.

I had considered using Citra. I made a pale ale with Simcoe and Amarillo which I liked, and I thought this hop combo might be similar.

If I like how this one turns out I'll probably try some variations with the hops. Might not have time to brew this for awhile. I'll post back after I do.

I think it's too much victory malt- I'd reduce that by half.

I also think the FWH and 60 minute hops are too much- I'd cut some of that, and that .25 ounce of hops for late additions is not enough. I'd reduce the 60 minute hops, so that you get 30-40 IBUs with the FWH/60 minute hops, and make the late additions one ounce at 15/10/5/0 and of course keep the dryhopping at 1-3 ounces.

Just want to make sure I'm interpreting your advice correctly ... you're recommending a total of 4 oz of hops in the late additions using a combo of the hops for each addition.

Thanks.
Dan.

Yes, but three would suffice if you wanted to do only 15/5/0 for times.

Thanks for the feedback. I was wondering if the Victory amount might be too high ... I'll reduce it to 1/2#

Here's the revised hop schedule:

Summit (18.20%) 0.25 oz First Wort
Summit (18.20%) 0.50 oz Boil for 60.00 min

Ahtanum (5.20%) 0.33 oz Boil for 15.00 min
Simcoe (13.00%) 0.33 oz Boil for 15.00 min
Summit (18.20%) 0.33 oz Boil for 15.00 min

Ahtanum (5.20%) 0.33 oz Boil for 5.00 min
Simcoe (13.00%) 0.33 oz Boil for 5.00 min
Summit (18.20%) 0.33 oz Boil for 5.00 min

Ahtanum (5.20%) 0.33 oz Add at knockout
Simcoe (13.00%) 0.33 oz Add at knockout
Summit (18.20%) 0.33 oz Add at knockout

Ahtanum (5.20%) 0.50 oz Dry Hop for 7.00 days
Simcoe (13.00%) 0.50 oz Dry Hop for 7.00 days
Summit (18.20%) 0.50 oz Dry Hop for 7.00 days

I'm considering upping the dry hops to .75 oz each ...

Agree with much of what Yooper said.

Cut Victory by half, then...

Summit .75 to 1.00 oz @ 60 min

Move your original FWH addition to 30 min

Finally, double all of the late addtions and dryhops in your LAST post.
