Default I Want to Brew a Guinness Clone.... Suggestions?

Ok, I should start by saying, I am not anywhere near ready to invest in a nitrogen system, but would like to get as close as possible to a Guinness DRAUGHT clone as possible. I would prefer an extract recipe as I am not yet ready to go all grain either, hopefully this fall I will.

So any suggestions?

Honestly, it's a pretty challenging beer to replicate. I've got an extract recipe from one of my BYO issues, but it involves a lot of work. You have to basically make one batch of beer lighter in color, then another batch of beer that's dark. Allow part of one of those beers to sour with brett yeast and then add them all together at bottling time. This is the only way other than using acid malt to get the "guiness twang".

As for getting the creamy head, you will not get an identical creamy head without a stout faucet and a beergas system.
If you are kegging with co2 you could get a creamer faucet head for like $25 on amazon. It will not have the cascade effect however it will give you a creamy head.

I have also read that at a low carbonation level you can pour a beer then shoot a syringe full of air into the beer. The force of oxygen will give you a cascade effect. I have never tried this method so I can not tell you if it works or not. The only thing that you would have to worry about is if the beer is too carbonated and you push air into it, it would overflow and cover you with delicious stout.

Actually you use a syring full of the beer and it works, I have tried it with a straw, works fine.

I know I won't recreate the texture but if I can get the flavour close, I was thinking about bottling half of it with half the priming sugar or even bottling before fermentation has stopped with no priming sugar. If I prime, I plan to use Kreamy X

My fear with the Guinness Clones is many of them do not specify if they are cloning teh Extra Stout or the Draught style.

that makes more sense. It was a long time ago when I was reading up using widgets from guiness cans in homebrew bottles.
