I have the grain bill ready to go so that cant be changed, but the hops are totally changeable.

I have on hand plenty of:

Simcoe
Amarillo
Cascade
Centennial
Willamette
Fuggle
Nugget
Mt. Hood

So the recipe, shooting for IIPA here, grain bill should give me SG of 1.077 unless I manage better efficiency than normal. IBU's = 102

Type: All Grain
Batch Size: 5.50 gal
Boil Size: 7.00 gal Asst Brewer:
Boil Time: 60 min Equipment: Keggle (15.5 gal) and Igloo Cooler (10 Gal)
Brewhouse Efficiency: 72.00

Ingredients

Amount Item Type % or IBU
6.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain 37.50 %
6.00 lb Pale Malt, Maris Otter (3.0 SRM) Grain 37.50 %
2.00 lb Munich Malt (9.0 SRM) Grain 12.50 %
1.00 lb Cara-Pils/Dextrine (2.0 SRM) Grain 6.25 %
1.00 lb Caramel/Crystal Malt - 40L (40.0 SRM) Grain 6.25 %

2.00 oz Simcoe [12.90 %] (60 min) Hops 63.0 IBU
1.50 oz Cascade [7.20 %] (30 min) Hops 22.5 IBU
1.00 oz Cascade [7.20 %] (15 min) Hops 9.7 IBU
1.00 oz Simcoe [12.90 %] (5 min) Hops 7.0 IBU
1.00 oz Amarillo Gold [9.30 %] (Dry Hop 7 days)

Using US-05 as the yeast.

I know Simcoe and Amarillo go together, would cascades be logical in the mix there too?

Sounds real nice. I like the cascades in there. Hop bill seems close to Dude's Lakewalk pale. I brewed his recipe about 2 months ago and I love it. If fact, I was thinking about making a IIPA based on it.

Go for it, imo

i am geting into smaller hop additions with expaneded schedules...sounds yummy though...like going 60,30,20,18,15,12,8,6,4,2 something crazy like that. this comes from a local brewery...

I don't like 30 and 15 minute hop additions personally.

If you're going for flavor and aroma additions, according to this chart you'd be better off at 20 and 10 minutes.

I'd change things around and do

2.5oz Simcoe 60
2oz Cascade 15
1oz Simcoe DH
1oz Amarillo DH

It wouldn't hurt to throw some corn sugar in the kettle either, maybe a pound or so to up the %ABV and dry it out a bit.

Just out of curiosity, what is it about 30 & 15 minute additions that you don't like?

Oh, god not The Chart again.

Guys, that chart is overly simplistic, to the point that it's just about useless. The percentages don't correspond to any measurable, well, anything. 100% of what? Further, the flavor/aroma times fly in the face of common knowledge - it is widely known, for instance, that flameout additions and dry-hopping add significantly more flavor and aroma than adding at 5 or 10 minutes. That chart would have you believe that the infusion drops off the closer you get to flameout, which plain ain't so.

Burn that chart. Burn the link to that chart. Ignore that chart if you can do neither.

Cheers,

Bob
