Default How does this recipe look?

Do you have any suggestions for this experimental recipe I'm working with? It is for 5 gallons, I may even bump it up to 6 gallons. It is an extract recipe with the 2 row and crystal being partially mashed and/or mini mashed.

Too much 2 row? Too much crystal? Brown sugar? Too much rice syrup solids? Too much DME? I know either way it will be beer and it will be decent beer for me. But I do want it to be the best possible. What do you think?

Pale Ale?
4 lbs extra light dried malt extract
2 lbs rice syrup solids
1 lb 10 L crystal malt
1 lb 2 row pale malt
1/2 lb brown sugar?
1/3 oz Burton Water salts (contains papain and gypsum)
3/4 oz fuggles (bittering)
1/4 oz fuggles (aroma)
Whitelabs American Ale Yeast blend

Unless you are mashing your grain, and not just steeping them, I would take out the 2-row. If you steep a basemalt you just end up with starch in your beer.

I think you have too much simple sugar between the brown sugar and the rice solids, I wouldn't go too much over 1 lb total in a moderate gravity ale. If you add too much simple sugar your beer will end up thin and without much flavor.

Any particular reason for the Burton salts? Is your water particuarly low in calcium or sulfate?

Hope that helps.

Yeah I am mashing the crystal and the 2 row (first time partial mashing).

My water is very soft, so I thought the salts might help.

I did suspect that I had too much simple sugar. I'll probably cut the rice syrup solids down to 1lb. Thanks for the help! Anymore?
