So replacing my 20 min flavor addition with this sound right?

the lady at the lhbs told me that saaz and sterling were the same thing. I asked "if thats the case, why are they named different?" ...then came the deer in the headlights look. Is there any truth to this? I understand they are close and can be substituted for each other, but the "same thing"? Wonder if she just repeats everything anyone who comes in tells her?

It's a Saaz "variety" grown in America. It is FAR from being the same as Czech Saaz.

That's what I've done a few times. Works great.

I love the willamette in blonde ales. My last blonde had only a 60 min bittering addition. (around 20 IBU's worth) Won 3rd place at a local tasting two weeks ago. I find simple recipes to be best for this style. Good luck!
