Default Hoppy Belgian/American fusion!

I have to say, as I am drinkin' this brew right now, this is friggin' fantastic!!! Anyone who likes the complexity of belgians and the hoppiness of american pales, IPA's, etc, will LOOOOOOOOOOVE this beer!!!

I originally modeled this brew after Hopfen Weisse. I just winged some stuff based on a pretty basic weizenbock with a blend of german and american hops. The end result is flat out awesome. I couldn't be happier with this beer.

The recipe I used is as follows:

Extract w/ steeping grains

Type: Extract
Date: 3/14/2011
Batch Size: 2.25 gal
Boil Size: 1.20 gal Asst Brewer:
Boil Time: 60 min

1.00 oz Cascade [5.50 %] (Dry Hop 21 days) Hops -
4.0 oz Brown Sugar, Light (8.0 SRM) Sugar 5.14 %
4.0 oz Cane (Beet) Sugar (0.0 SRM) Sugar 5.14 %

After 7 days it is WELL carbonated and very very good! I can't imagine what this stuff will taste like after 2 months! I really hope it lasts that long! Best beer to date!

What yeast did you use? Sounds more like a German/American fusion?

I did a hoppy hefeweizen last summer with WY3068 and Cascades and Amarillo, I was wsurprised how well the combination worked.

Well, I'll just call it a 'European'/American fusion. lol. I used WY3068 as well. What a fantastic yeast!

I brew a beer that seems to resist all classification that I, along with anyone that has ever had it, love. It started as a Belgian and uses a Belgian golden ale yeast but has American hops and no ester flavor. I say if it tastes good brew it! I would love to enter it in a competition but as of yet can't classify without changing the recipe.
