Default Hop Question? (whitebread goldings)

If a recipe calls out for the following,

1.5 oz. Whitbread Goldings@5.7AA (bittering- sub any Golding for this)
1/4 oz. Fuggles (flavoring)
1/4 Oz. East Kent Goldings (flavoring)

Can I just use 1.75 of Kent Goldings, I wasn't sure what Whitbread Goldings meant.

It is a variety but you can substitute. How To Brew had the following info on the variety:

Name:
Whitbread Goldings Variety (WGV)

Grown:
UK

Profile:
Flowery, fruity, a cross between Goldings and a Fuggle.

Usage:
Often combined with other varieties in Bitters

Example:
Whitbread Best Bitter

AA Range:
4 - 5%

Substitute:
Progress, Fuggles, EKG

WGV is a cultivar of Goldings developed by the giant Whitbread brewery. I happen to like it, and can confirm it falls between the rather coarse, grassy flavors of Fuggles and the spicy herbal notes of East Kent Goldings.

If you're going to be bittering with it, it can easily be replaced. I wouldn't sacrifice East Kent Goldings for that use, however; they're too good an aroma variety to waste as a bittering charge. Get something European and less-expensive, like Challenger, or even a US-grown Fuggles cultivar like Willamette. Just avoid very strongly-flavored hops like the American "C" varieties (Cascade, Chinook, etc).
