Hey everyone,

I want to do a Hop in the Dark clone, and I read that Deschutes cold steeps the dark grains @ 55*F and adds that to the pale mash. What do you all think of this recipe for a clone? I'm a little worried that if I cold steeped the dark grains, it wouldn't get dark enough to make the whole 5.5 gallons black. Thoughts?

What if you added them in late in the mash? Or just added the black barley late in the mash? 20-15 minutes or so? The only problem is that a lot of flavor will be left behind due to the shorter mash time. Definitely a balance that needs trial and error.

I put carafa 3 late in the mash and it seemed to get pretty dark.. I probably need to use more because my BIPA came out a littler darker than a brown but much lighter than a black ale.

Not sure if your aware Deschutes has a homebrew section on their website. It says it has the "recipes" for all their beers. I put recipes in quotes because it is only ingredient lists and states that time/amount etc. are the challenge.

Yeah, that is pretty much where I got the info for the ingredients in my clone recipe above. I guess my question is more along the lines of cold steeping the dark grains. How much should I steep? In how much water? I'll probably end up just experimenting myself and post back results.
