Default Honey Wheat

Another wheat recipe using honey malt...my first one; any thoughts are appreciated.


Honey Wheat

Batch: 5.5 gal
Mash: 152°F 60 min 2.8 gal
Boil: 7 gal 60 min
Estimated OG: 1.046
Estimated FG: 1.012
Estimated ABV: 4.4%
Estimated IBU: 12
Estimated SRM: 3

6.0 lb Wheat Malt
2.0 lb 2 Row Pale
1.0 lb Honey Malt

0.5 oz Cascade(60 min)
0.5 oz Tettnanger(60 min)

Why not,sounds decent never used tetnagnager but have use hallertau and the like often. What yeast do you plan on using?

Anyone have suggestions about the honey malt? I've never used it and read different opinions on how it should be used and in what quantities..

I'd suggest toning down the honey malt to ~.5lb. It's a pretty potent flavor; I used 1lb in a hop bomb IIPA I made a few weeks back and it's still pretty cloying. The wheat might help balance it a bit (for you), but I thought the same about the pound of hops I was using .

+1 to .5# of honey malt
With that much wheat I would add a pound or 2 of rice hulls they are cheap and can prevent a huge headache

Why the 2 different hops @ 60 min?

If you like rye or would like to add a spice character to it you could add some rye malt, I biab so i dont have to worry about stuck runnoff or whatever.Rye can be sticky,so the rice hulls is a good idea. Are you going to prime with honey? Ive never done it but i need to.Im on my way to get some thai palm sugar for a rye this weekend,ill probably prime with it too.
I used about 1.5# 5 gal batch equivellent of honey malt,crystal 20 and oat malt,all together turned out so good i posted my recipe up for it.Of honey malt i used about the equivellent of half pound in that.

+1 on the less is better to honey malt. Don't over do it.

Looks pretty plain and simple. +1 to toning down the honey malt. I would add maybe some more hops maybe like .25 oz cascade at 15-20 minutes or something like that.
